  • The back, ribs, and keel bones are removed from our butterfly quail, with the wing, leg, and thigh bones left in tact leaving the back of the breast exposed. This is an ideal cut for grilling and has substantial plate coverage.

  • Season well with salt & pepper. Sear or grill 3-4 minutes per size.
